My son was playing with the photo booth and now I can't get the silly picture he took out of the upper right corner when I send mail. How do I change this to a more work appropriate image or delete it completely?

It sounds like he had the image added to your address book card.

Go to Address Book and find your entry.

Click "edit" on the bottom.

Delete your picture or replace it with a new one.

Or, it may have been added in Accounts. Go to Accounts in System Preferences. Choose your account on the left and click the Picture tab. You'll see the option to assign an icon to yourself there.

This picture is not sent with your messages.

Just as your son added the photo taken with Photo Booth as your "Me" photo for your contact information in Address Book which should also match your login account photo, you can add a photo for a person's contact information in the Address Book and when receiving an email from this person with Mail, the person's photo you added for their contact information in Address Book will appear in the same location above the message header for the received message.
