I'm considering buying an old G3 and fitting it to that then using target mode
Just FYI, G3s do not support target disk mode. You'd have to have an AGP G4 or later. -

I think you meant to say the G3 does not support FireWire Target Disk Mode. It may support SCSI Target disk mode, but that is no help when the other Mac (MacBook Pro) has no SCSI port. -

I'd forgotten about HD Target Mode (as it would be called in the PB G3s). As you say, though, since the MacBook Pro doesn't have SCSI, it would require the OP to purchase another system, and I think the external drive adapter would be less expensive and a lot less hassle.
