I have a MacBook unibody, late 2010, running Windows 7 Home Premium x64, and also ran into this same problem (no dimming controls) after installing the latest video drivers for the GeForce 9400M. I fixed it by rolling back to the previous driver, as follows:
1. Control Panel -> Device Manager
2. Expand "Display Adapters", right-click on "NVIDIA GeForce 9400M", then select "Properties"
3. Switch to the "Drivers" tab, then left-click "Roll Back Driver"
I have a MacBook Air running Windows 7 with bootcamp. The brightness control buttons no longer work after the 310.xx driver. Issue has been fixed after alittle bit of research. Thanks all who participated the bits and piece of this resolution. Start off by installing the latest NVIDIA drivers and latest Bootcamp. Yes you heard me correctly. No need to roll back, the latest and greatest worked for me. version 337.88
1) Go to control Panel, then device manager, then under "Monitors" I've Disabled the "Generic PNP monitor"
2) Open regedit and go to the HKEY_LOCAL_MACHINE/SYSTEM/CurrentControlSet/Control/Class/{4D36E968-E325-11CE-B FC1-08002BE10318}/0000
3) Add a new DWORD called "EnableBrightnessControl" and set the value to 1.
4) Reboot and the brightness keys should work again.

I have a MacBook Pro 2010 17" running with a AMD Radeon HD 6750M.
I'm running BootCamp V5 with Windows 8.1

You can fix it installing the last bootcamp version and drivers and by adding the regist automatically entry by using the following file from my creation:

If you find compatibility problems installing the last bootcamp version:
1st go command prompt (start-->type "cmd"-->execute it as admin)
2nd type cd in the command prompt and go to the apple folder of bootcamp directory
3rd type msiexec /i BootCamp.msi (or BootCamp64.msi or BootCamp32.msi) and finish installation.

I have the same issue here so I found out a way that I can fix the volume, here is how. and it works perfectly with me. and I am still looking for another way to solve the brightness issue.

Increases your display brightness in your mac os then it will autometically increases that brightness in windows operating system, it works for me, try yours
