iOS 17.5 has not even been released to the public yet. If you are saying that you have installed iOS 17.5 on your phone, you have installed beta software.
Tap Settings > General > About > iOS Version to confirm what software has been installed on your phone.

Apple didn't install Beta Software on your iPhone. You or someone else who may have access to your phone did. If you don't want or need to be a beta tester, a link was provided above by Bob Timmons on how to uninstall Beta Software. Follow the directions in the link.

There is no way that iOS 17.5 could be installed on your phone otherwise. iOS 17.5 has not even been released to the public.

Settings > General > Software Update > Beta Update > Off
But why can’t I turn it off?
It appears in the recommendations when I search for it in settings, but when I get directed to software updates, there is no option for beta!?
