Photos 3.0 on High Sierra replaced the "All Photos" album by the "Imports" album. This album is showing all photos in the library split into a sequence of Import Sessions, sorted ascending by the date of import. You can always find your most recent imports at the bottom of this album.

To see the photos arranged by the capture date, use the "Photos" album at the top of the sidebar. This will show them chronologically split into Moments, Collections, Years.

If you rather want to have a dedicated album, that is sorted by the capture date, showing all photos in one place, create your own smart album "My All Photos" and set it to sort by the capture date:

  • File > New > Smart album
  • Set the smart rule to "Date is before "1.1.4000" or any other date in the far future.
  • Then ctrl-click or right-click the album and set the sort order to "Keep sorted by oldest first" or "Keep sorted by newest first".

This way you could also create an all Photos Album, sorted by the title.

Note: This album will not include any hidden Photos. To include your Hidden Photos, add a rule "Photo is Hidden" and combine both rules by "Match Any".
