If you're using MS Exchange accounts in Entourage, that's a whole other story...
I have several different email accounts thru mac entourage, but they don't show up as an option in itunes. I turned on sync preferences in entourage and checked synchronize contacts. I don't use the cal or notes just email. Still didn't show up in itunes. I thought all email accounts can be added?

You'll need to add those accounts by hand in the phone (Settings -> mail). All that page in iTunes is doing is copying the settings from the Mail program, if you use that. But if what you're saying is that you use Entourage to check POP or IMAP accounts, you can set those up yourself in the phone.

I do have an exchange account set up in Entourage that I have to use on iPhone.
There was really nothing to "setup" in Entourage, it basically did everything for me. I was hoping it would be that easy on iPhone. 🙂

That was one of my main concerns, but happily it works fine and contacts DO come over from Entourage in your sync. <sigh of relief and wonderment!>
Apple simply does not tell you how to do it, and in terms of a graphic user interface, it isn't confirmed in some manner on the iTunes sync window. This will hopefully be fixed in a subsequent update.
For others reading this, please note the following steps to sync your contacts and calendar items (assumes use of Entourage 2004, 11.3.5):
Go to Entourage>Preferences>Sync Services. Check the desired boxes for Address Book, iCal (for events and tasks from your calendar), Notes.
The synchronization from Entourage to Apple's apps happens in the background seamlessly. You can then simply sync your iPhone and they will appear on it. What a relief and amazement to see my hundreds of contacts all listed accurately just as they are on my computer.

I did add my accounts by hand to the iphone. My problem now is that all 3 of my accounts inboxes say load "Load 25 More Messages..." and only my mac mail account shows actual emails in the inbox. I was able to send an email from my entourage account(on the iphone) so i know i have it set up, but it doesn't register any email in inboxes. Any ideas?
I can not get my contacts from Entourage to sync with iPhone, tried exactly what you said to do, Entourage>Preferences>Sync Services and checked them all but nothing sync. I even shut everything down and restarted it to try again and it still didn't work? Any other suggestions?
I don't know why but it just started to sync and all my contacts showed up, Thanks for your posting I struggled for 2 days with this.

I'm using Entourage and it didn't move any of my old messages over. But it did move my email account info (I think) and it's now working great. I just don't have my old emails. But all new emails are copied to the iPhone.
Could someone actually explain what's happening? For example, when ever I view the email message on the iPhone I assume that its just lets you view it, but it doesn't get deleted from the my web hosts server. That's why when I open my laptop and check email with Entourage, it downloads the same messages. Then when I delete them from Entourage, they're gone......right?

iTunes only syncs your e-mail settings, it isn't supposed to sync over any of your messages. Once the settings are on the phone, it should basically be sending and receiving your messages automatically.
I have my Entourage mail set up on iPhone as IMAP (I have it set up in Entourage as POP) so that it downloads any new mail on my server. So if I read it on iPhone and then go to Entourage, it will download it to Entourage. If I delete a message from iPhone BEFORE opening Entourage, then the message will be deleted off the server, therefore, it won't download to Entourage.
