How to erase email address from MAIL??

Sometimes I might only send 1 email to someone yet MAIL will keep track of all the email address I send emails to. How can I go in and delete certain email addresess out of whatever list it stores them in?

I do NOT have any email addresses stored in my addressbook but when I go to send an email and say the email starts with "C" then its going to pull up all the email addresses that start with "C" then I select the one I need and send the email. Just trying to find a way to edit the email addresses that are automatically stored.
