Is there a way to customize display options when you place and receive calls? On my phone if there is an associated photo it fills up the screen when I send or receive calls. On the website - e.g. the Apple website homepage it shows a small photo in the upper right corner and the wallpaper fills the screen. What gives?

I believe this is determined by WHERE you enter the image. If you place an image in your Address Book, when you sync the image will be transferred and placed in the upper left when you call. If you sync a photo to your iPhone then add the image, it'll show up in the background when that person calls.
In my experience, it's not exactly where the photo was entered that determines this. You can either (in either Mac's Address book application or Outlook) assign a photo to a contact. In Address Book you can even scale and move the picture around until you're happy with the cropping.
On the phone, the default for a photo synced from your computer is to have it in the upper corner. If you want to have it full screen, all you need to do is select "Edit" of the contact, then click on the picture (which also says Edit)
if you click on "edit Photo" from the 4 choices that pop up, the photo will fill prety much full screen. If you then choose "select Photo" the next time that person calls or you call that person, you will get the full screen version.
If you take the photo from your iPhone, it will sync to the contact in your desktop app when you sync and you can edit it in the contact (at least in the Mac's Address Book app).
So people, when you send or receive calls does the caller's photo show up in the corner (like John Appleseed on the Apple home page) with your wallpaper filling the rest of the screen - OR does the caller's photo fill the screen? Mine does the latter. I'm not saying it's a problem - in fact I kind of like it - but why is it different than what's shown on the website.
It's not a problem, it's whichever way YOU want. If you want it just in the upper corner, select the contact's photo when you're on the computer editing the contact in Address Book. If you want it to be the background on the whole screen, select the contact's photo using the edit contact screen on your iphone. In short: contact photo selected on computer gives the upper corner; contact photo selected on the iphone itself gives the background.
