hyl, i'm not sure if i can help, i don't have a mac, but you don't need to put the 1.0.2 back in that folder or disable the option about automaticaly check for updates, i understant that you said that this option is not available.
Just delete the 1.0.2 and make sure you have the 1.0.1 in that folder, restart everything and don't allow acess to the internet, use iTunes to restore ipod's software and that's it, it worked for me on Vista.

kudos88, i done that using Vista and the search box, if you are using XP make sure you enable search for hidden and system files, type *.ipsw and search for it, must find the two files together with the other two for the update 1.0.1, find 1.0.2, delete it, you don't need to download the 1.0.1 again as you said, it should be there since the first time you updated you ipod to 1.0.1
my destination path on Vista is: C:\Users\<my name>\AppData\Roaming\Apple Computer\iTunes\iPod Software Updates, there is no other way to downgrade that i'm aware of.
