Do NOT install OS X server on a Mac Mini, they only use a laptop drive running at 4200rpm and you will probably kill the drive.
Did anyone install OS X Server 10.4.2 on Mac Mini and/or iMac G5 ? One of our servers is down and we are looking at getting one of these machines until we can get an xSever. We are looking to run a email server. Can these machines withstand mail service ?

That's silly. You need to backup statements like this with hard evidence, not unfettered speculation.
It's not the best environment in the world for a server, but plenty of people are using Mac Minis for web serving etc. If you are going to use it for a short time (ie weeks, rather than months) and you don't have hundreds of users, then you should be fine.
If you want to be extra careful, install the OS on an external, 3.5" drive, which will be a bit more robust than the internal drive in the Mac Mini.
