No. Bluetooth only works for Audio.

There are several Garmin units that will pair up with the iPhone, but only as a handsfree. This means you can pair up the GPS and the phone, take and make calls simply by doing so on the screen of the GPS. Even the caller ID shows up on the GPS. It won't work in the way you are hoping.
