Auto Responce
Is there a way to set up an auto responce if you are gonna be out of town for a week or so?

You can do so by creating a Rule in Mail but this requires leaving your Mac on along with an internet connection and the Mail.app launched and running.
I suggest you set the automatic check for new mail to no more often than every 15 minutes.
If this is available at the server level for the email account, it is best to do so that way since it doesn't require leaving your Mac on and the Mail.app launched and running.
