change the name of the Trash

I would like to change the name of the Trash, I do not know if this will cause it problems or if it can be done...

Unfortunately, the term "Finder" seems to be hard coded into the Dock... but you can still change what Finder appears like in other places. To change the name of any application, find the application in the Finder (or whatever else you want to call it), right click and choose "Show Package Contents". Navigate through Contents » Resources » English.lproj and open "InfoPlist.strings". Change the application name to suit your taste. Save somewhere safe, and copy to the original location. Keep the backup. Then relaunch Finder using killall Finder. Alternatively, entering defaults write com.apple.finder QuitMenuItem 1 in the Terminal will allow you to quit the Finder using command-Q.
Of course, you can modify any .strings file, which allows you to change the text for almost anything. But also note that removing a double quote could make the application/OS unuseable.
