setting margins in Mail emails???
Is there a way to set (lock) my own 'margins' in Mail? So that I can know what will be seen on the other end?

The best bet is to just keep typing and trust the email client at the other end to get things right. Initial blank space on lines are okay. Remember, the other person is using a computer, not paper (well, I know you know that), but we don't know what his screen resolution is, font size, or anything. I hate to say it (not really, but it is hard for some to "get") the least common denominator is Plain Text format.
