Well... untill Apple or someone else takes the time to really address this issue, I've come up with a solution that is far from perfect but that will do the trick.
1. Download the iPhone Configuration Utility from here:

2. Install it;
3. Run it and connect your iPhone;
4. On the left tab, go to Configuration Profiles and then Advanced;
5. Insert some nonsense parameters under:
- Access Point Name;
- Access Ponint Username;
- Access Point Password;
6. Go to Share and send an email with the new Configuration Profile to one of the accounts you can access through your iPhone.
7. Receive the email on your iPhone and install the attachment.
8. Go to this url
http://www.taniwha.org.uk/gprs.html (it was the first that google gave me, but probably there are others) or contact your carrier to retrieve the correct:
- Access Point Name;
- Access Ponint Username;
- Access Point Password;
9. Redo everything untill now but this time insert the correct parameters.
10. Email yourself the new Configuration Profile;
11. Save both emails on some mail folder that you can access all the time;
12. When you decide you (don't) need GPRS/3G go to your email and install the correspondent profile.
Hey... it's not perfect but it gets the job done.
