More than likely you can revert back to a month to month basis if you return the iPhone since you signed a two year contract for the iPhone's subsidy, but you should contact at&t about your contract situation if you return your iPhone.

So I bought mine at an Apple store, I understand that I may or may not be hit with a 10% stocking fee (seems to depend on who helps you and how nice you are to them). Either way, if I have to pay the 10% fee that's not the end of the world. But my question is...what happens to the 2 year contract? I was already an AT&T customer prior to getting the iPhone but my contract was up so I was simply going month-to-month on an old RAZR v3. My old bill was something like $58/month total after all fees and taxes. Do they simply tear up the new contract and I revert back to how I was before I got the iPhone? Or am I still locked into the new, much more expensive plan that I agreed to with the iPhone?

More than likely you will have to pay the restocking fee if you return it within the first 30 days. After the first 30 days, you own it.

You have a 30 day trial period. If you return the iPhone, your status goes back to what is was before, which is no contract. Also, there is no restocking fee if you return within 14 days.

I think I incorrect. I returned mine yesterday because it was defective. They didn't have any in stock to replace it. So no restocking fee was charged. Here are the return policies.....

I'm not sure this is correct. The link you provided is for general Apple Store purchases, which was different for the first generation iPhone. With the first generation iPhone, it could be returned for payment credit within the first 14 days only. If the packaging was not opened, full credit was issued. If the packaging was opened, there was a 10% restocking fee.
Technically and actually, an iPhone returned for credit with the packaging opened requires that Apple perform rework or work on it prior to resale, and it won't be sold as new.
