On the iPhone device in iTunes. You just edit the name there and the next time you sync, the iPhone will update its name.
but it only change the name in itunes. it wont change it for the device name on a network. when i connect into my router to see who is connected, it says "IPHONE-2", and in itunes, my iphone name is "sw*'s iphone"
Here's how to do it.
To rename your iPhone's device name:
1. Click on the name "iPhone" (default name) on the devices list on iTunes.
2. When "iPhone" is highlighted and the summary is displayed on the right, click it again.
3. Pick a name, press enter to confirm it.
4. CONFIRM THE NAME: If it is successful, the iPhone will display the name at the About Section.
Check: Go to Settings > General > About. The name of the iPhone should be above all of the information boxers.
Check 2 (Technical): If you are using Wireless, go to your Wireless Router's information page (Commonly: 192.168.2.1 for Belkin, 192.168.1.1 for Linksys, 192.168.x.y where x & y = the last 2 numbers of the DEFAULT GATEWAY FOUND ON THE WIRELESS CONNECTION DETAILS). Check the DHCP Client List (May require login to the router information. Contact Network Administrator if the password isn't a default password defined by the manufacturer of that router). If the name of the iPhone is displayed, it works!
For example:
My iPhone has been set as "Boo Jung" on iTunes and also got synced to the iPhone. On the About screen, it says "Boo Jung" on the top. On my Belkin router, the DHCP client name is "Boo Jung".

i tried that. my device name in itunes is "swong's iphone"...but in my router it is showing up as "IPHONE-2" for some reason
Have you gone to Settings - WiFi - Tapped on the blue circle next to network - And chose Forget This Network? try that and then reboot the iPhone.
Then reconnect to network and see if it accepts you. You may need to disconnect power to router for 2 to 3 min, reconnect and it should pickup the new name of the iPhone and update the list.

what I don't understand is when was the phone named "IPHONE-2"? when it should be named "swong's iphone"?
Not sure. The Default name usually comes from the name of the PC/Mac you are using.
Example: My PC name is DNA so when I restore my iPhone the default name is always DNA's iPhone
So I change it if I want or I keep it as I can always change it later.

I tried what you suggested, but my network still think the device name is "IPHONE-2", weird
Turn off WiFi on the iPhone, Go back to the router does it still show iPhone-2?
nope. it disappears
If you have any apostrophes (for example the ' in "Alistair's iPhone") it wont work because its not a valid DHCP name. You can only use letters, numbers, and a few other characters (for example, underscores _ and hyphens -).
If you give your iPhone a unique name without any "illegal" characters, it'll work fine.
You also need to click the "Renew Lease" button under Settings > Wifi Networks > "Your wireless Network Name Here"
