VLC standard player

Hi,
This is my first mac (MBP late 2008) so coming from a PC it's pretty sweet. Can't imagine why I didn't switch earlier. Anyway, I use VLC and been using the Open with > VLC player to play my videos. I also chose to open as VLC for the video but I think the option is only for that specific video.
On the PC I could associate anything to any file and have that program use it to open it. I look through this forum in case someone else asked the question, no one did. I tried looking on the VLC and going through every option of the VLC to find a way to associate .avi files to be opened with VLC. nothing. Is it something I'm missing? how do you make the choice more permanent and across the board? Thanks guys!
