I found a 'good enough' solution.

1 - plug your headphones in.
2 - turn your iphone off
3 - turn your iphone back on (with the headphones still plugged in)
4 - never use the ipod function again (or go to step 1 after every use of iPod)

I have several applications that play ambient music or games, and whenever i connected the headphones the iPod application would start. Once I power cycled WITH THE HEADPHONES CONNECTED, this seems to fix the problem.

Please feedback if this works for you, or there is a better way.
