If I get a 3GS, can I turn my iPhone into an iPod Touch?

I bought the original iPhone when it came out and I want to buy a 3GS when they are available. When I do, I'd like to use my old iPhone to run Remote to control iTunes running on my music server. Can I turn off the phone part of the iPhone but still have Wifi and run apps like Remote?
