Perhaps it is a consequence of not having to Edit an address to make changes to notes, but it is not possible to undo accidental changes to a note, which I often do because it is too easy to select the entire note and then type something in. Why? It drives me crazy each time it happens.
I am not sure if I understand your problem but........
I just entered a bogus note on one entry in my address book. I then changed to another entry and then changed back to the address with the bogus note. Undo was available and when I selected it, the bogus note disappeared.
If that describes your problem, post back. If it does not, ignore my observation.
It is not an instant solution, but I hope you pass along your issue to Apple through the feedback facility.
One other thought. If you use Time Machine, you could restore the address book entry to an earlier iteration. Not elegant, but it would get back what you deleted in error.
I'm not talking about changing to another record. If I am editing an address with an existing note and I want to add something to it, if I make a mistake and key over the existing note there is no way to undo that change.
Unfortunately that page does not have an option for Address Book ... it is only for purchased products (i.e. those not included in OS). I did find it via google ... at bugreport.apple.com and entered a report there.
