It seems to be limited to the first time each day (or after a shutdown.

Mine still does that, too, -- not EVERY TIME, but -- the next time I restart after deleting the iChat .plist, even
after I have reset all the iChat preferences to the settings described above.
I believe it also does it when I force the chrons, but I am not CERTAIN of this. Do you keep your Mac awake 24 hours a day? If so, the chron functions may be resetting this "for" you.
To stop it, whenever I get the Bonjour interruption although the preferences settings are already as I like them, I "Cancel" the Bonjour window, open iChat AV as desired, and then I change the
b iChat > Preferences... > General
"When I return to my computer, and my status is Away:" setting.
If it is set to "Ask what to do", I change it to "Keep my status as Away". If "Keep my status as Away" is currently set, I change it to "Ask what to do". Making this change seems to save an updated iChat preferences file that stops Bonjour interruptions next time I launch, whether the next day or after restarting.
I can later return the "When I return to my computer, and my status is Away:" setting to my real preference if necessary, and Bonjour stays away until I toss iChat's .plist (which I seldom do), or, possibly, when I Force the Chrons.
