Where is the iPhone backup file stored which is produced during synching?

Background: I had a HD crash and replacement: this created problems with the iPhone apps in iTunes (i.e. they "disappeared" from the Applications tab in iTunes.

Question: why can't I restore the iPhone to the last backup that is automatically made when you sync? Does anyone know where that backup file is located and how to invoke it?

You had a hard drive crash and you maintain a backup for your computer's data that includes your iTunes library - the iTunes named folder where the Mobile Applications folder is located, and you restored your iTunes folder from your computer's backup?

No? There was no hard drive crash. Every file has previous restore points. I am running Windows7 (which rocks) but think it's that way in Vista too.

Windows 7 is not supported by iTunes and/or by the iPhone. Has Microsoft released Windows 7 officially yet?

3rd party applications are stored in a Mobile Applications named folder located in the iTunes folder where all other iTunes content is stored.

I have presently 5 folder in Backup named with random numbers and letters. I always thought they were different backups over time.

I just checked and have three of these files, hence you may be right.
The Apple doc, refered to above, however mentions that there is only one.
Go figure. 🙂

Before a firmware update is installed, a new backup is created.

When restoring an iPhone with iTunes even from the iPhone's backup, I believe a new backup is created for the iPhone with the following sync.
