Mobile Access Single Server & Proxy

So from the postings, it looks like Snow Leopard Server requires a Proxy server.
My question is: We only have a single server in our organization. What is a recommended proxy server software/hardware/etc. so we could use Mobile Access Server?

The official Apple answer is that TWO servers are neccessary to implement Mobile Access service.

I have a server with two Ethernet interfaces. How about letting me bind Mobile Access to a particular interface? How about letting me add a second IP address to an interface and bind Mobile Access to that? If this can be done, it's not obvious in the Server Admin interface or in the preference file.
