If you feel like voiding the warranty, sure. Except that I've not seen any French Canadian keyboards for uMBPs available from parts vendors, and replacing the keyboard is not the easiest of tasks.
Let's back up - why do you require a French Canadian keyboard? It's true that it's very different from the French keyboard, but the basic layout is actually not too different from the US keyboard layout. All of the necessary diacritical marks are possible by using simple option key combinations, á à ç ô, etc. Another option would be to buy a French Canadian external keyboard, and connect to the MBP (you can set the input map to French Canadian - in fact, you can do that for the internal keyboard and just ignore the characters printed on the keys, and you'll get FC input).
