using spell check with two languages

If a doc is a single language one, the app will treat it accordingly.
If it was imported, you may have to open it, select all and define the language thru :
Inspector > Text > Other > Language

You may have to do that also for the docs created in Pages because the docs default to the main system's language and doesn't switch automatically if you use an other language.

I am spell checking several documents that are mostly english but contain a handful of German words as well. I would like Word to check both English and German spelling; however, this doesn't seem to happen automatically like you indicated in your post. A possible reason for this is that not enough German words appear in the text for the computer to pick up on the second language. Do you or does anyone else have a suggestion? I tried creating a custom dictionary with German words that seem to appear regularly in each of these documents. Although, the German word "Volk" appears many times, which I added to the Custom Dictionary, but it is still treated as a misspelled word when I check.

gtlightfoot - in System Preferences > International Languages make sure you have selected both english and german languages.
In the Inspector - Inspector > Text > More > Language choose All

Remember to first select ALL text before you change language in the Inspector!
