MDP to HDMI: Kanex iAdapt 20 vs iAdapt 51 question

I'm fairly certain this would work, but I want to make absolutely sure before pulling the trigger. I couldn't find a topic about this specific difference between the two cables on here or Teh Googles.

So the Kanex iAdapt 20 does stereo digital audio through USB, and the 51 does 5.1 optical audio. Would I be able to plug the optical version into your average TV and still have the TV spit out the signal in stereo? I know this normally would be the case, but I'm not sure if there is any weirdness with this setup.
