Making iTunes library find missing tracks in multiple, not one by one

That's the thing, they're at the same spot, I simply changed them from .m4v to .mp4 so that I could watch them on my TV with my HDD.

Ah, that will be why. iTunes isn't expecting the file extension to change, so it cannot repair the unexpected edit. You can probably swap the extension back with something like this: http://osxdaily.com/2015/05/28/batch-rename-files-mac-os-x-finder/. This would fix the currently broken links in iTunes, You could then potentially write an AppleScript that for each selected file reads the current path, renames the file, then updates the iTunes database. Actually given we're talking OS X once you've fixed the broken links you may be able to batch rename again as long as the files are on an HFS+ volume. I've just manually changed one of my .m4v files to .mp4 and iTunes kept track of it.

9. What should I do about the itunes media library.itl files (I assume nothing as we're rebuilding). However, what about the Album Artwork folder?

I've done the above and iTunes appears to be searching but it's been approximately 7 hours and the status bar has not moved - given I have 2.4tb of music is this normal or is it not working?

how do you "locate" the file? I have several old iTunes libraries that come up plus media folders and other Tune named spots

Use Get Info, say no when asked to locate the file, then look at the last known location as given on the File tab. That might help you work out where the file really is.
