Stopping iTunes being default music player

I have several players, such as RealPlayer, QuickTime and VLC, capable of playing mp3, AAIF and other types of music files already on my computer. Whenever I double-click one of these files, it is always iTunes that opens and starts playing the file. How can I prevent iTunes being the default player?

eMac G4 (PPC), 1.25 GHz, Mac OS X (10.4.11)

Select a document, choose Get Info from the File menu, specify the correct application under Open With, click on Change All, and confirm this action.

Thank you, Niel. I should have remembered that very simple procedure, which I have used before but had quite forgotten about.
