Does anyone know how to submit a book to ibook?

lots of macs, Mac OS X (10.4.3)

Your best bet is to check out Smashwords.com. There you can have a book published in every e-book format should you choose.

Note that they have a free ebook dedicated to how you need to structure your file for proper ebook formatting.

They have specific instructions on the requirements for iPad.

Many thanks for the URL which shows how the iStore is handling submissions, channeled through iTunes or a partnered aggregator. You know, the answers really were in the URL quoted: http://itunes.com/sellyourbooks (^=^)

And they will be the most reliable as starting points. It took less time to read, too, than to write this, here. The smile means I'm not being critical...

Pages exports to epub far better than Smashwords' "Meatgrinder". My files looked just as I wanted them and they passed epubchecker first go, but they didn't look so good once they'd been through Meagrinder. In desperation I even downloaded the trial version of the evil Word. I won't be buying it, partly because I'd have to buy the whole suite, which is expensive, and I'd be buying something I will never use again anyway. The Pages-exported-to-doc files opened just fine in it, but weird things STILL happened once I resaved and uploaded to the Smashwords site. Most books lost all their italics. I couldn't work out what the difference was between them and the one book that didn't lose them so after several attempts I decided to leave well lone. But I'm still miffed. I come from a typesetting background so I like things to look right!
