Well Im using 2 languages on my iPad English and Korean and if I type something in both language they automatically check the spelling as well...
I also write in both French and English, using Pages (or email) on an iPad. For me the easiest way to do this, without changing the ios is just to go to to settings and turn automatic spellcheck and correction off. Perhaps it means sticking to the default keyboard and doing the spell check yourself. Using the default keyboard I find that this is compensated for by the fact that accents, (graves, acutes, cedillas and so forth) are easily managed by just holding your finger on the letter you want to accent and then sliding the finger to select the appropriate accent.
Not ideal, but, to my mind much less fuss than fiddling with hr IOS.

Does it not work for you to just change the keyboard between English and French, which only takes a second via the "Globe" key.
I think I have the solution to this problem. It allows a quick change of language for spell checking WITHOUT changing the OS Language when using a wirless keyboard. Personally I use this method every day to switch between Spanish and English. I'm using iPad 2, the latest versions of Pages at the time of writing and IOS 5.1.1

1. Make sure you have the keyboard language you want to use added in General Settings (Settings:General:International Keyboards:Add a New Keyboard)
2 Once you are in Pages or any other app use the key that brings up the software keyboard (on the Apple Keyboard it's in the very top right hand corner, if you are using any other read the user manual that came with it to find out)
3 Use the Globe Key, to the left of the Space Bar (on the screen keyboard) to switch to the language you want.
4 Use the hardware keyboard button or the screen keyboard button (extreme bottom right) to get rid of the software keyboard.
That's it! As long as you have spell checking enabled for the language you are using (which is the default setting when available) it should now spell correct in the language you want as you type.

The standard way to do that is by using the keyboard shortcut apple/command + space. Does this not work for you?
BRILLIANT! Works perfectly! At least it does with my Apple keyboard. Of course, people still have to make sure they have both keyboards in Settings. Just goes to show how problems that we find really annoying often have a simple solution if you take the trouble to talk to people.

Nope - this does not work 4 me. i want 2 type in French or English on a ( French) AZERTY keyboard. Linking the language to the keyboard settings is à pain :-(

You should have no problem if you do the settings correctly. You need to have both English and French keyboards activated, then make sure that when you tap on those items on the list you have selected French in the Hardware section. Then you will be able to use an azerty keyboard and, by switching between French and English via apple/command plus space, get correct spellcheck for each.
Thx 4 your speedy reply ... but I do have one remaining problème ... I can't see an apple/command key on any of the (integrated) ipad keyboards! - à quick websearch confirmed that I wasn't alone ... does that key exist on an ipad?

It doesn't exist on the screen keyboard. aRory, to whom you responded, is using a bluetooth hardware keyboard.
If you are using the screen keyboard, you use the "globe" key to switch layouts, and you make sure that in the Software category that appears when you tap on the English item in the keyboard list that you have selected AZERTY.

You don't.
All you can do is hold down the key, for a letter and a menu will appear showing all the alternate accents printed over the letter as in French the e can be ê or è, or ë.

That's not correct. The language is easily changed by activating the language keyboards you need and then changing them via the "globe" key.

I couldn't find the global key until I activated the other keyboards in Settings/General/Keyboards. Then the emoji button in Pages changed to a globe.
