The version 3.1 is meant to be the BootCamp Windows Drivers Apple provides.
The version of the BootCamp Assistant is not relevant.
The 3.0 version of the BootCamp Windows Dirvers is on the Snow Leopard OSX Install DVD and the 3.1 driver version can be downloaded here

Also, I have a MacBook2,1, am I right in thinking that this will only support Windows 32-bit?
Apples list of supported Mac with 64-bit Windows 7 is here
http://support.apple.com/kb/HT1846 and doesn't list any MacBooks at all.
However, some people have had success installing 64-bit Windows 7 and the 64-bit BootCamp Drivers when doing the driver install 'by hand'.
But unless you have more than 4GB of RAM and/or have 64-bit Windows programs to run, I would suggest to stay with 32-bit Windows 7.
