??? MIDI is dynamic by nature. It is not "Locked-In" to whether you are recording or playback.
Just double click the track, the editor window will slide up, select Modulation (Select "Piano Roll", then change the view to "Modulation", and make your changes with your mouse.... as many times as you want, whenever you want... Check the manual for the Mod value-range for each vowel sound for each voice instrument.

I wonder if it's possible to create the QT dooh sound from scratch in GB
QT only has standard Defined MIDI sound, Pgm 52 Choir Aahs, Pgm 53 Voice Oohs, no Dooh" voice in QT. So, don't really know what you are talking about there... How did you get a "Dooh" voice?
So, I am having a "Whaaaat!!??" moment here.
I suppose you could do a Google search for "Dooh" soundfont... you may get lucky. GB will use most "single" instrument soundfonts (if properly formated). I have added a number of them, including a very nice harmonica.
