I don't think photos are maintaining original resolution anymore and there is no option to do that. If you follow this link, you can see there was an option at one time to maintain original resolution:

I wish there were a setting to control "optimization" in iTunes, but apparently Apple doesn't want you to store high quality images, even if you choose to use your flash memory on that. Disappointing.
I'm currently using iTunes 9 and I'm not sure when this the maintain original resolution feature went away.
