iMessage Issue

I’m having an issue with my iPhone showing the wrong date and time in iMessage, it always shows Sunday 12/30/18 9:33 AM. I’ve tried numerous things to try an resolve this issue including turning iMessage off and back on, turning set date & time automatically off and on, restarting the phone, updated to 12.1.1, and finally backing up the iPhone and then completely erasing and restoring it, all to no avail.
