Hi, so I need help with this and say the exact same question answered by saying go to Settings> General>Restrictions but I don’t see restrictions. I do see CarPlay in general, but the only option I have is Bluetooth or USB only. Frankly I want Bluetooth only (since that is 100% easier to turn off) and no USB CarPlay at all. So please help me turn it off.

Thanks for using Apple Support Communities, it's great to have you here. If I understand your post correctly you do not want your phone to detect CarPlay.
If you have the latest version of iOS installed, you can go to Go to Settings > Screen Time > Content & Privacy Restrictions, tap Allowed Apps and make sure that CarPlay is not toggled on.
