When I connected my phone to my computer with iTunes, I used to be able to sort or organize my apps on the different screens. It was easier to do this on my desktop. Now, I cannot find and file for viewing my apps and sorting them in iTunes on my desktop. Has this been changed so that I can only do this on my phone?

Yes. Starting with iTunes 12.7 App management and few other things were removed from iTunes.

Apple dropped support for app management in iTunes well over a year ago. If you have a Mac you can download Apple Configurator 2 from the Mac App Store. This is an enterprise tool for managing enterprise-issued iPhones, but it can also be used for managing apps on your phone.
That was changed a few iOS versions ago. You can only manage the apps on the device now.
