I want to merge my contacts so that they appear from my iPhone onto my MacBook, all new contacts I create seem to merge onto my Contacts app on Mac but it won't move any of my exisiting contacts. Any help would be much appreciated.

I'm not quite sure which ones are missing, your iPhone's Contacts or those on your Mac, but the solution is the same either way. Start by exporting your existing Contacts, then import them using the device on which they're missing.
From your Mac, use https://www.icloud.com/#contacts and click the "gear" icon at the lower left. Choose "Import vCards" or "Export vCards", whichever is appropriate.
Resolve duplicates using the Contact's app Card menu > Look for Duplicates...
