Disk Utility Encryption (Not available for USB stick)

I'm trying to create format a USB memory stick (USB3.0 128GB) in either an APFS (Encrypted) or Mac OS Extended (Journaled, Encrypted) formats. However these options do not appear. The option does appear for devices such as an SSD drives. Is this supported for this type of device?

MacBook Air (2018 or later)

You have to select the full drive, and for "Scheme", choose GUID Partition Map instead of the default (Master Boot Record).

Then the encrypted options will appear.

The image below was obtained while experimenting with a basic 8GB SD card, so even that can be formatted as APFS encrypted (I didn't, this was just to see if it would work).
