I have a 27inch Cinema Display and have just got the new Mac mini but the display remains blank when plugged in - I have tried the normal thunderbolt connection through to usb 3 adaptor and have also tried hdmi to thunderbolt in the back of the screen?

Just what adopters did you try? The Apple thunderbolt 3 to thunderbolt 2 adopter does not support video via a mini displayport.

One can get adapters that plug into a thunderbolt 3 port that can output video via a mini displayport plug.
Do you have the Thunderbolt 2 display or the one that uses a minAdapter.i displayport connection?
Note that the plugs for both thunderbolt 2 and mini displayport have same dimensions can be plugged into one another. A pure thunderbolt 2 port on a Mac carries video that can be accessed with a mini displayport plug and monitor.

Sorry, I had a DoH! moment - as Illaass pointed out you need a usb-c male to miniDP female adapter, such as https://www.amazon.com/ARKTEK-Thunderbolt-DisplayPort-Converter-Supports/dp/B072KS1HQ9
But again I will point out to the poster who said there was no solution, you can find any combination of either direct cable or adapter to go from any combiniation of DP/miniDP/usb-c. solutions for going between different ports and connection genders are a simple web search away.
Apple is a member of the DP standards consortium and follows the VESA standard as their hardware has evolved of miniDP, TB2, TB3/usb-c.
Ok well the easy answer would be can someone tell me exactly which apple connector I need to make the 27inch apple Cinema Display work with a 2018 Mac mini please?

You don’t need an adapter - you can buy a direct cable, eg. https://www.amazon.com/Displayport-Weytec-Adapter-MacBook-Samsung/dp/B076D7DR72
There are direct cables to go from any combination of DisplayPort, miniDP and usb-c in and out since those connectors are all part of the integrated DisplayPort standard.
P.S. That’s just one example, there are numerous other brands and vendors of such cables on Amazon, Newegg and other online electronics stores. .
