On your iPhone, in the Health app, go to: Health Data (tab) > Body Measurements:

Tap on Weight > tap on Unit > change to kg.
Return to Body Measurements, then tap on Height > tap on Unit > change to cm.

The changes will also be reflected on your Apple Watch.
