If you still have the paired iPhone (working) go into Settings and click on the top entry (Your Name). This should show you the Apple ID for the phone, and most times this will also be the Apple ID fort the watch.
If you have the watch setup on an accessible Find my iPhone you could also remove the Activation Lock and start from scratch.
