I think I may have installed two OS Mojave on my new iMac and can't quite figure out how to eliminate the one that is "extra"

You do not have "two" Mojaves.
You may have downloaded the *installer* twice. And you may have an installer lying around in your drive (see below).
First, make sure you are indeed running Mojave: go to the Apple menu->About this mac.
What do you see there? Post a screenshot (not including your mac's serial number - that is private information!)
It should look something like this (yours may be a lighter color; I am using "Dark Mode"):
Second, go to your Applications folder and see if there you have an application called "Install macOS Mojave".
That is the installer. If you downloaded and installed Mojave, it should have been deleted automatically; but if you downloaded it again, it may be there. If you are already running Mojave, you can just drag this installer to the trash and empty it.
