Airplay mirroring from a macbook to an apple tv has very noticeable lag and makes watching videos unbearable. Using Airplay without mirroring is a lot better however this option isnt available on all videos, what can I do to Airplay these videos on my tv?

If you have any movies or TV shows stored in your iTunes library, you can access those programs through "Computers" icon on the Apple TV. You also may want to check your internet connection if you're getting that much lag.
The only way to use basic airplay from a Mac would be through iTunes or via safari (for videos that are made compatible)
If you are encountering lag with mirroring then that would be due to an issue with your network. Airplay mirroring is done over the local network, so internet connection wouldn’t be relevant
To troubleshoot
Make sure no other activity is occuring (other streaming, web use, network backups etc)
If on wifi try Apple TV on Ethernet
To see a current status of the network get a report from istumbler, netstumbler or similar. Look for signal strength, noise and nearby networks
Test on another network
