I would like to export the apple watch GPS data (recorded while I'm doing outdoor cycling activity) to a navigation application (GPX, KML ... or any other standard) . Is there a way to do so ?

Apple does not provide a standardized way to record and export gps data to third party apps, but one of the apps you hope to use might have the ability to recover it direct from the watch. You will need to check the specification for the app you wish to use.
