iPhone Depth of Field adjustment

I have a new IpHone Xr.

Love the camera but in Portrait mode why can't I access the depth of field adjustments in post processing or shooting if not taking an image of a person?

I realize Portrait mode uses eyes to determine something alive is being photographed but giving iPhone photographers the capability likely via a software IOS update would be a great feature to the world's most used camera EVER.
