My phone is connected to the Eduroam wifi network, but I'm not able to connect my watch. It lets me enter my username and password, but then doesn't log me in. I'm connected to my wifi at home fine on my phone. I've tried switching everything off and back on a few times and forgetting the network on my phone and logging in again, but still not working. Any ideas?

then tell us which stage goes wrong. The support docs provide a shared reference so we know exactly where you failed, without having to post a huge description of your actions so far.
The other possible problem... check the iPhone is connecting to a 2.4 GHz access point, because the watch doesn’t support 5 GHz WiFi.
If it connects once then you have the correct protocols and authentication data stored by your iPhone and watch. That tends to point more at the network access point and possibly the lookup of authentication at Eduroam. It could even be something as simple as a timeout in authentication, a limited number of connections permitted by the AP, or you might have connected your credentials with more than the permitted number of devices.
Once again, did you read the support docs I linked? Did they provide any clues?
I tried to connect to Eduroam again today, did exactly the same as yesterday, and this time it connected. However, when I moved away from the office when I returned it refused to connect again. So presumably this means I’m not doing anything wrong, but maybe needs resolving by Apple? My phone is connected to Eduraoam all the time I’m at work no problem, so I know it’s not a network issue.
