Is there any way to connect apple headphones (the ones with the lightning adapter that you get with the iPhones) to a PC? I haven't been able to find any sort of adapter for this purpose.

No, it can't be done. There are 4 microcircuits in the lightning connector that need power, and a headphone jack can't supply any power.
