If I join Apple Music, do I lose all the music I download when/if I cancel?
And what happens to all the music on my other devices that I downloaded from CD's that I have purchased in the past?

Of course you do. It is a subscription. Stop paying, stop getting the service.
your other music is still yours to keep but any Apple Music tracks will stop playing.

Perhaps I didn't word my question exactly right. Let me try again;
I have playlists, and I have songs I purchased from Apple in those playlists. I also have music in my iTunes from CD's that I purchased over the years that are in my playlists. Many more are on my old iPod. About 7000 songs.
According to Apple, I am not able to use (or sync) those old CD purchased songs on more than one device due to current copy laws.
What I am wondering is; Will I lose ALL of my Apple Music, whether it was purchased, downloaded, and/or subscribed to with Apple Play, if and or when I cancel the subscription. They say all my music will sync over all devices.. so will the purchased CD music stop being available on my devices if I cancel the subscription?
I am unable to legally share my music library on my old IPOD with any other devices at this time. With the Apple Play subscription it seems to insinuate that ALL of my music can be shared on ALL of my devices. So.. will I lose all of my music, some of my music, or just the current streaming content that Apple Play makes available to me?
My objective is to be able to listen to the music that I already paid for via CD, or per song/album from iTunes on all of my devices. And yes, also enjoy the benefits of apple play.

while you have a paid subscription you have the personal rights to play or stream each of those music types via your iCloud music library. You neither gain title to the Apple Music tracks, nor do you lose title to your CD based or iTunes purchased music.
whatever acquired music you had before you started Apple Music is yours. The mechanism to stream it goes away.
CD based music is your responsibility to have backed up as you lose your iCloud music library when your Apple Music subscription ends. You should not consider the iCloud music library as a backup of your music.
itunes Music you purchased by track or album should still be in your local library when the subscription ends. If it isn’t you can download it again from the iTunes Store.
playlists that are cloud based are gone as well when your online Music library ends. Local playlists should not be affected. If you don’t already back them up, you should.
