When I open Notes on my iphone it opens in the folders screen. I have many notes that are not in a folder but I can't figure out how to go "Back" one level so I see the notes and then an option to go to folders.

Tap the Notes app to open it. At the notes list, tap the arrow in the top left corner. On the Folders screen, tap New Folder. Select where the new folder will live, on your phone or in iCloud. Give the folder a name and tap Save to create the folder.
Folders are :- iCloud, On My iPhone, Gmail etc
Tap on New Folder to get this.
Notes opens in "Folders" only
